• 8 slices of streaky bacon, chopped
  • 100g mixed leaves
  • 4 tomatoes, chopped, or 8 baby plum tomatoes


  • 3-4 tablesp. groundnut oil
  • 1 tablesp. wine vinegar
  • 1 tablesp. whole grain mustard
  • 50g blue cheese, crumbled

Bacon Salad with Blue Cheese Dressing

This is a firm favourite, great flavour and easy to make.

Serves 4
Cooking time: 10 minutes
To Cook

Start with the dressing.

Whiz the oil, vinegar, mustard and cheese in the processor.

Taste for seasoning.

Cook the bacon in a pan until crisp.

In a large bowl mix the leaves and tomatoes together.

Add the warm bacon and any juices in the pan.

Mix in the dressing and serve immediately.
